High-Protein, Low-Sugar Chocolate Cake

Ingredients (serves 8–10)
- 1 cup (100g) almond flour
- ½ cup (60g) unsweetened cocoa powder
- ½ cup (120g) Greek yogurt (low-fat, unsweetened)
- ½ cup (120ml) unsweetened almond milk (or skim milk)
- 3 large eggs
- ½ cup (120g) unsweetened applesauce (natural sweetener & moisture)
- ¼ cup (60ml) melted coconut oil (or light olive oil)
- ½ cup (50g) whey or plant-based chocolate protein powder
- 2–3 tbsp erythritol/stevia/monk fruit sweetener (adjust to taste)
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp vanilla extract (optional)
- Pinch of salt
- 3-4 large Strawberries or Raspberries
Method
- Preheat oven to 175°C (350°F). Grease and line an 8-inch cake tin.
- In a large bowl, whisk together the eggs, Greek yogurt, applesauce, almond milk, coconut oil, and vanilla extract until smooth.
- In another bowl, sift and combine the almond flour, cocoa powder, protein powder, baking powder, baking soda, salt, and sweetener.
- Gradually fold the dry ingredients into the wet mixture until well combined (avoid overmixing).
- Pour the batter into the prepared cake tin.
- Bake for 25–30 minutes, or until a toothpick inserted comes out mostly clean (slightly fudgy is okay).
- Allow to cool before slicing.
- Top-With choice of your berries(Strawberry/Raspberry would be more ideal to align better with chocolate flavour)
